SummaryBright, floral-fruit coffee from the slopes of Volcán Barú. Everyday lots are washed or natural Caturra and Catuai; Gesha is the tea-like auction coffee, not the default bag.Clean and refreshing: soft florals and delicate fruit. A quiet cup if washed Ethiopias feel too loud.
Tasting notesfloral honey, bright fruit, tea-like sweetness, citrus zestjasmine tea, green apple, cane sugar, almond, soft citrus
Who grows itEstates and smallholders in Chiriquí, including Ngäbe-Buglé communities.Smallholder cooperatives in Cajamarca, Amazonas, Cusco, and neighboring regions.
Producers in detailChiriquí coffee comes from estates and from smallholders, including Ngäbe-Buglé producers. Boquete on the east slope and Volcán on the other side are the shopper towns; Renacimiento is another growing area. A region word plus washed or natural is the honest traceability on most bags.CENFROCAFE, CECANOR, and similar cooperatives made Peruvian smallholders visible to specialty buyers. A bag may name a cooperative, a district, or a women’s producer group. Traceability is often at association level rather than a single finca - still a real producer story, just a collective one.
TerroirVolcán Barú is the landscape. Coffee grows on its foothills in Chiriquí. Boquete catches the east-slope weather; Volcán sits opposite. Cool nights at 1,200–2,000m keep the body light and the florals or fruit loud. This is not a chocolate-nut origin.Eastern Andean slopes facing Amazon humidity, or drier inter-Andean valleys. High farms in Cajamarca and Cusco give florals; jungle-edge San Martín lots can taste greener if altitude is lower. Shop for a highland region name.
ProcessWashed and natural are both common; experimental lots exist.Often washed.
Process in detailEveryday Panama is washed or natural. Washed lots keep the cup tea-clean. Naturals dry whole cherry and push fruit. Experimental lots show up on specialty menus - they are not every bag. Do not assume a Panama is fermented in a sealed tank unless the label says so.Washed Peruvian lots are pulped and fermented at small mills, then dried on raised beds or tarps. The profile is clean, floral, and lightly fruity rather than heavy or earthy - closer to a quiet Colombia than to Sumatra. Honey and natural experiments exist in Cajamarca and Cusco but are still the minority on export bags.

Altitude (light)Highland Boquete - often 1,200–2,000mHigh Andes - often 1,200–2,000m
Altitude (detail)Boquete lots commonly grow 1,200–2,000m on the east slope of Volcán Barú. Volcán sits on the other side of the same volcano. That height and volcanic soil are why even everyday Caturra and Catuai can taste floral-bright instead of chocolate-heavy.Cajamarca, Amazonas, and Cusco specialty lots commonly grow 1,400–2,000m. That altitude supplies the soft floral lift; it is not as extreme as Nariño’s highest farms, which is why Peru stays gentle.
VarietiesCaturra, Catuai; Gesha/Geisha on auction lotsTypica, Caturra, Bourbon, Catimor (when labeled)
HarvestMain harvest roughly November–March.Often April–September in the north; timing shifts with valley and altitude.
Brew recPour-over, light roast, black. Treat Gesha lots like tea: plenty of water, no milk. Everyday Caturra and Catuai still want a paper filter so the florals stay clean.Pour-over or AeroPress, light-medium roast. Do not bury it in dark roast or heavy milk.
