Who grows itSmallholder cooperatives in Cajamarca, Amazonas, Cusco, and neighboring regions.Smallholders and drying stations in Guji, Sidamo, and Hambela.
Producers in detailCENFROCAFE, CECANOR, and similar cooperatives made Peruvian smallholders visible to specialty buyers. A bag may name a cooperative, a district, or a women’s producer group. Traceability is often at association level rather than a single finca - still a real producer story, just a collective one.Cherry is often dried at a station that buys from surrounding gardens, or on the farm on raised beds. Traceable naturals name a station (Hambela Wamena, Uraga, Shakiso) rather than a single household. The farm-life picture is picking, floating, and raking cherry for weeks - not a depulper.
TerroirEastern Andean slopes facing Amazon humidity, or drier inter-Andean valleys. High farms in Cajamarca and Cusco give florals; jungle-edge San Martín lots can taste greener if altitude is lower. Shop for a highland region name.Southern sidamo-guji highlands: forest, red soil, and enough dry days after harvest to finish a natural. Harrar in the east is the historic natural region (winey, wilder); modern specialty shoppers more often meet Guji and Hambela, which cup cleaner and more blueberry.
ProcessOften washed.Natural (dried in the fruit) on raised beds.
Process in detailWashed Peruvian lots are pulped and fermented at small mills, then dried on raised beds or tarps. The profile is clean, floral, and lightly fruity rather than heavy or earthy - closer to a quiet Colombia than to Sumatra. Honey and natural experiments exist in Cajamarca and Cusco but are still the minority on export bags.Ripe cherry is sorted, then dried whole for three to four weeks on raised beds. Workers turn it so the fruit cannot clump and ferment into vinegar. Hambela and Guji naturals are the bags that cuppers describe as blueberry and strawberry; Sidamo naturals can lean citrus candy. The seed never sees a wash channel.

Altitude (light)High Andes - often 1,200–2,000mHigh-grown - often 1,750–2,200m
Altitude (detail)Cajamarca, Amazonas, and Cusco specialty lots commonly grow 1,400–2,000m. That altitude supplies the soft floral lift; it is not as extreme as Nariño’s highest farms, which is why Peru stays gentle.Guji and Hambela lots frequently grow above 1,900m. Slow drying in cool air is why the fruit stays defined instead of collapsing into generic “natural funk.”

HarvestOften April–September in the north; timing shifts with valley and altitude.Main harvest roughly October–January; drying continues well after picking.
Brew recPour-over or AeroPress, light-medium roast. Do not bury it in dark roast or heavy milk.Pour-over or AeroPress. Use a paper filter; a metal filter can make the fruit feel heavy. Slightly coarser than a washed Ethiopia if it tastes jammy-bitter.
