Process in detailWashed Peruvian lots are pulped and fermented at small mills, then dried on raised beds or tarps. The profile is clean, floral, and lightly fruity rather than heavy or earthy - closer to a quiet Colombia than to Sumatra. Honey and natural experiments exist in Cajamarca and Cusco but are still the minority on export bags.Washed processing is the Honduran specialty default: cherry to beneficio, ferment, wash, dry. Marcala has a denomination of origin. Santa Bárbara and Copán lots can show citrus and florals that surprise people who still think “Central America equals chocolate.” Honey Pacamara and Gesha from producers such as Marysabel Caballero and Moisés Herrera (El Puente) are the competition face of the country.
