Who grows it

Who grows it

Lots are often blended at a mill that buys from many gardens. Traceable Gayo or Lintong bags may name a cooperative. The farm-life image is raking drying seed on concrete, not a Kenyan washing channel. Sorting by hand after hulling is still part of the cup quality.

Process in detail

Cherry is pulped, briefly fermented, and dried only until the parchment is still damp. Hulling that wet parchment - giling basah - exposes a swollen seed that finishes drying on patios in humid air. The result is low acidity, heavy body, and cedar-herb notes. It is not a washed Ethiopia that went wrong; it is a different process chosen for a wet climate.

Wet-hulled

Wet-hulled (giling basah)

Sumatra’s method: parchment is stripped while the seed is still damp, then dried again. Body goes heavy; acidity drops.

Cherry is pulped, briefly fermented, and dried only to about 30–40% moisture. Hulling that wet parchment (giling basah) exposes a swollen, bluish-green seed that finishes drying on patios. The mechanical stress and humid air mute sparkle and build the Mandheling and Gayo profile. It is not a defect - it is the process the climate and mill culture selected.

The story

Mandheling is a trade name from the Mandailing people, not a single farm. Gayo coffee from Aceh has its own identity and a geographic indication. Dutch-era mills and today’s collectors still gather parchment from smallholders, wet-hull, and grade. If championship routines celebrate Gesha florals, Sumatra is the other pole: savory, grounding, and unapologetically process-driven.

Brew

French press or espresso. A paper pour-over can taste too thin. Medium-dark roast is traditional; very light roast can taste vegetal.

Mid-highland - often 1,100–1,600m

Altitude

Gayo highlands in Aceh and the Lintong / Mandheling areas around Lake Toba commonly sit 1,200–1,600m. That is respectable altitude, but wet-hulling and humidity mute the sparkle you would expect from the same elevation in Kenya.

Varieties

Old Typica lineages mixed with Catimor-related Ateng and Tim Tim (Timor hybrid influence). Onan Ganjang is a local leaf-rust survivor. Variety is less of a shopper cue here than process: two bags can share genetics and still taste like forest vs fruit if one is wet-hulled and one is fully washed.

Long, staggered harvests; many regions pick across much of the year, with peaks after rains.
